Nothing in your fridge? Make a sandwich!

Man-I am boring. Want to know what I’ve been eating the past 5 days? Chicken soup, saltines, diet ginger ale, raspberry sorbet, oatmeal, antibiotics. Oh boy-those antibiotics are tasty. Yeah-still getting over the strep and it still sucks. So I haven’t been cooking anything or eating anything particularly healthy. Cooking was the last thing I wanted to do. I didn’t want to put any effort into fixing food, which is very rare for me. I could barely open up the tub of chicken soup and put it in a mug and stick it in the microwave. I also didn’t care about eating healthy. When I finally got back my appetite, I just wanted to eat foods that made me feel better, which ended up being a pint of really good raspberry sorbet. And, you know, those antibiotics made me feel better too. Overall, being really sick doesn’t really go along with cooking healthy food. Let’s hope I return back to normal health next week so I can have more fun in the kitchen. But, for now, I’m perfectly content lying on my bed with my sorbet, remote control, and Rob & Big.

It’s a good thing I made this last Friday, before I got really sick, so my blog wouldn’t turn into a healthy cooking ghost town.

black bean and avocado sandwich

Looks tasty, eh? No, I’m not Canadian. I just pretended I was for 10 years when I went to camp in Ontario. When I got home last Friday night I realized I basically had no food. Bad planning for the week threw me for a loop (I think it was the strep beginning to mess with my head even though I wasn’t sick yet. Excuses excuses!!) and being the penny-pincher that I am, I refused to go to the grocery store or order in, so I assessed my pantry and fridge. I had some old-ish black beans in the fridge (but not so old that they were entirely inedible), whole wheat english muffins in the freezer that I bought months ago–seriously, no clue when I bought those, and my roommate offered half of an avocado she wasn’t going to use. I love black beans! I love avocados! I love sandwiches! A dinner was born!

I tried to defrost the english muffin in the microwave, but it started getting soggy and nasty, so I threw it in the oven to toast (I don’t have a toaster or toaster oven. no room!!). While it toasted/stuck to the oven rack/almost set off the smoke detector (like the Rilo Kiley song…anyone??), I mashed about half a cup of almost spoiled black beans with a bit of olive oil, salt, pepper and chili powder. You might have noticed that I put chili powder in alot of my food. Cause I love it. A ton. I even put it on my salad. When the english muffin was not frozen anymore/kinda warm, I smushed down the black beans and topped it with sliced avocado. And voila! So easy! Sooooo delish! It sure did hit the spot. And I didn’t have to go to the store and spend money I don’t have.

So, cross your fingers for real food next week. Cause, you know what, I’m kinda sick of raspberry sorbet and antibiotics. At least I finished the raspberry sorbet. But I’ve got a long way to go on the antibiotics.

    that looks tasty!! i love black beans with avocado. I love them both separately too, but together is wonderful. Plus fresh tomatoes though : )

    Oh my gosh…that looks really tasty! I made something sort of similair, only I turned the bean mix into a dip for kashi crackers…I never thought of adding it to a sandwich (or adding some spices like you did.) Definitely trying this at some point…:)

    black beans are my favorite, especially because it goes with cilantro, and anything that goes with cilantro is branded as My Favorite Food.

    i bought veganomicon and have been wanting to make the black bean burger. looking at your version of a black bean sandwich, i just might make it today for lunch.

    i’m going to try a 10 mile run today! hopefully, i’ll make it to the end. i know i will, but right before going on the run, i always get slightly nervous, even if it’s not a race.

    You are FAR from boring, Betsy – it’s hard to eat when you’re sick! And hey, if that sandwich is considered boring, then I’m boring too, because it looks sensational. Black beans + avocado = match made in heaven. Yum!

    Cute blog!

    I just saw your re to Jenna’s lunch post, and I was hoping you would have some tips on how to make grilled pb sandwiches!!

    Also, I just wanted to recommend that you start eating some yogurt until you finish your course of antibiotics!! They are notorious for causing both diarrhea and yeast infections 😮 because they oftentimes also wipe out the good guys along with the bad bacteria. Plain would be best, but flavored is probably fine too– try activia.

    I was in the same boat a few weeks ago. Fighting the flu and no food in the house. I did order a great chicken soup from nearby place that kept me going for a few days.

    actually, I had to go to work today, which was worse than spending the day outside in the gross weather. And considering it takes me 1.5 hours to get to work…I woudl have rather wandered in the gloomy rain.

    That sandwich sounds fantastic. Black beans and avocados are amazing together. One of my friends likes to put a slab of grilled olive-oil-brushed chicken atop a bed of black beans, then slathers the chicken/beans with a salsa made of avocado, chopped tomato, lime juice, cilantro, onion and whatever else strikes her fancy that day. I’m sure it would taste even better with a little chili powder thrown in somewhere… 🙂
